Ingredients: For the pastry dough:

  • 2 cups all-purpose flour
  • 1/2 cup butter, chilled and cubed
  • 1/2 tsp salt
  • 1/2 cup water, chilled

For the filling:

  • 1 cup mixed vegetables (such as carrots, peas, potatoes, and green beans), finely chopped
  • 1/2 cup onions, finely chopped
  • 1/4 cup green bell peppers, finely chopped
  • 1/4 cup oil
  • 1 tsp cumin seeds
  • 1 tsp ginger-garlic paste
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1 tsp garam masala powder
  • Salt to taste
  • 1 tbsp chopped cilantro

Instructions:

  1. To make the pastry dough, combine the flour, butter, and salt in a mixing bowl. Mix well until the mixture resembles breadcrumbs.
  2. Gradually add chilled water to the mixture and knead until it forms a smooth dough.
  3. Cover the dough with plastic wrap and refrigerate for 30 minutes.
  4. In a pan, heat oil and add cumin seeds. Once they start to crackle, add the onions and sauté until they are translucent.
  5. Add the ginger-garlic paste and sauté for a few seconds.
  6. Add the mixed vegetables, bell peppers, red chili powder, coriander powder, garam masala powder, salt, and cilantro. Mix well and sauté for 5-7 minutes or until the vegetables are cooked.
  7. Allow the mixture to cool down.
  8. Preheat the oven to 425 degrees F (220 degrees C).
  9. Roll out the dough on a floured surface to 1/8 inch thickness.
  10. Cut the dough into circles using a round cutter or a lid of a jar.
  11. Place a tablespoon of the filling on one half of the circle, leaving a 1/4-inch border.
  12. Fold the other half of the dough over the filling, making a semi-circle and press the edges to seal.
  13. Place the puffs on a baking sheet lined with parchment paper.
  14. Brush the puffs with beaten egg or milk.
  15. Bake for 20-25 minutes or until golden brown.

Serve the Veg Puffs warm with ketchup or chutney of your choice. It's a perfect snack for any time of the day. You can also use different vegetables and spices according to your preference.
