Ingredients: For the Puri:
- 1 cup maida (all-purpose flour)

- 1/2 cup boiled chickpeas
- 1/4 cup diced onions
- 1/4 cup diced tomatoes
- 1/4 cup diced coriander leaves
- 1/4 tsp red chili powder
- 1/4 tsp cumin powder
- 1/4 tsp chaat masala
- Salt and sugar to taste
For the Pani:
- 2 cups water
- 2 tbsp tamarind paste
- 2 tbsp mint chutney
- 1 tsp cumin powder
- 1/2 tsp black salt
- 1/2 tsp sugar
- 1/4 tsp red chili powder
- Salt to taste
Instructions:
- To make the puri, in a mixing bowl, combine the maida, semolina, and salt. Mix well.
- Slowly add water to the mixture, and mix until a dough forms.
- Knead the dough for a few minutes until it becomes smooth and elastic.
- Cover the dough and let it rest for 15-20 minutes.
- Roll out the dough into thin circles using a rolling pin.
- Heat oil in a deep frying pan over medium-high heat.
- Carefully drop the dough circles into the hot oil, making sure not to overcrowd the pan.
- Fry the puris for 1-2 minutes or until they puff up and turn golden brown.
- Remove them from the oil and drain on paper towels
- To make the filling, in a mixing bowl, combine the mashed potatoes, chickpeas, onions, tomatoes, coriander leaves, red chili powder, cumin powder, chaat masala, salt, and sugar. Mix well.
- To make the pani, in a separate mixing bowl, combine the water, tamarind paste, mint chutney, cumin powder, black salt, sugar, red chili powder, and salt. Mix well.
- To assemble the Pani Puri, take a puri and make a small hole on the top using your finger or a knife.
- Fill the puri with a spoonful of the filling mixture and top it with a spoonful of the pani.
- Serve immediately and enjoy the Pani Puri.
