Ingredients:
- 2 cups chopped drumstick leaves
- 2 cups chopped tomatoes
- 1 onion, finely chopped
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 tsp urad dal
- 1 tsp chana dal
- 1 tsp red chili powder
- 1 tsp turmeric powder
- Salt to taste
- 2 tbsp oil
- 1/4 cup tamarind paste
Instructions:
- In a pan, heat oil and add mustard seeds, cumin seeds, urad dal, chana dal and fry until they start to splutter.
- Add the onions, red chili powder, and turmeric powder and sauté until the onions turn golden brown.
- Add the tomatoes, tamarind paste, and salt to taste. Sauté for a couple of minutes.
- Add the drumstick leaves and sauté for 2-3 minutes or until the leaves are wilted.
- Add 2 cups of water and bring it to a boil.
- Once the sambar thickens, turn off the heat and allow it to cool down.
