Biriyani is a popular and delicious dish that is made with rice, meat or vegetables and a variety of spices. Here is a recipe you can use to make chicken biriyani at home:
Ingredients:
- 1 lb boneless chicken, cut into small pieces
- 2 cups basmati rice
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 inch ginger, minced
- 2 green chilies, finely chopped
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp garam masala powder
- 2 cups chicken broth
- 1 cup peas
- 2 tbsp oil
- 1 tsp ghee
- Salt to taste
- 2 tbsp chopped cilantro for garnish
- 2 tbsp chopped mint for garnish
- 2 tbsp fried onions for garnish
- 2 tbsp cashews for garnish
- 2 tbsp raisins for garnish
Instructions:
- Soak the rice in water for 30 minutes. Drain the water and set aside.
- In a pan, heat oil and add cumin seeds. Once they start to crackle, add the onions and sauté until they are translucent.
- Add the garlic and ginger, and sauté for a few seconds. Then add the green chilies and sauté until the raw aroma disappears.
- Add the chicken pieces, and sauté until they are brown.
- Add the coriander powder, turmeric powder, red chili powder, and garam masala powder, and sauté for a few seconds.
- Add the chicken broth, peas and salt to taste. Bring it to a boil and then lower the heat and let it simmer for about 10 minutes or until the chicken is cooked through.
- In a large pot, bring 4 cups of water to a boil. Add the drained rice and 1 tsp of salt to the water, and let it cook for about 10-12 minutes or until the rice is cooked but still firm.
- Drain the water and spread the cooked rice in a plate to cool it down.
- Once the chicken is cooked, spread the chicken mixture on top of the cooled rice.
- Heat ghee in a pan and fry the cashews, raisins and onions until golden brown.
- Spread the fried cashews, raisins and onions on top of the chicken mixture
- Cover the pot with a tight-fitting lid and cook on low heat for about 15-20 minutes.
- Once done, turn off the heat and let it sit for 5 minutes.
- Fluff the rice with a fork and garnish with chopped cilantro, mint.
Serve the Biriyani hot with raita or chutney of your choice.
Note: You can also add or replace chicken with mutton, shrimp or vegetables of your choice, and adjust the cooking time accordingly.
